I’m going to start off by stating the facts. I don’t do mornings. No matter how many hours of sleep I get the night before, mornings never come easy for me. Anyone who knows me well, understands the importance of texting/ calling me after 11am to maintain in good-standing. I have come to the realization that I will never be a morning person. It is for this reason I have perfected my morning breakfast routine as one that is nutritious and satisfying. Today I am sharing my 5 minute or less oatmeal parfait!
Mix 1/2 cup large flake oatmeal, 1/4 cup steel cut oats and 1/2 cup water into a bowl. I prefer large flake oatmeal as it contains more texture than regular or small flake oatmeal, however, any sized-oatmeal will work. Aside from additional texture and taste, steel cut oats are rich in dietary fiber and aids in decreasing risk of diabetes, hypertension, and obesity. I’ll take it!
Microwave dish for 2 minutes. Let sit for 30 seconds to cool off.
Now the fun part! Dice your favorite fruit for a fruity flavor. I prefer strawberries, blueberries, and pineapples, but some tasty alternatives include kiwis, bananas, peaches and apples. Place fruit on top of oatmeal & steel cut oats.
To complete this dish, I sprinkle organic honey on the fruit for an extra punch of sweet. Note: I also add non-dairy creamer or almond milk to the dish on occasion for variety!
